This is a relatively quick breakfast that is a nice change to the morning smoothie. You can sub the swiss chard for any other leafy green, and feel free to add extra flavourings. I like this topped with salsa and some cayenne too!

Ingredients:
½ tsp coconut oil or cooking oil
1 clove garlic
¼ cup chopped red onion
2 eggs
(Optional: ¼ cup egg white for added protein)
1 leaf of swiss chard (option to remove stems)
Salsa (for topping)
Directions:
Heat oil in pan over medium heat
Chop garlic and onion and add to pan
Saute for 2-3 minutes, until onion translucent
Add swiss chard and saute further, until wilted
Add in eggs and scramble all together
Top with salsa (or kimchi)
