Meal Prep Breakfast Burritos

This recipe is part of a collection of 3 unique make ahead breakfast recipes to add to your meal prep. This is a breakfast that will fuel your days and for those of you that like something more substantial for breakfast or want a warm lunch.

*To make vegan, substitute the eggs with 900 grams tofu. Drain the tofu and crumble it in the pan with the beans. You may just need to add some extra seasoning to the tofu and beans if you are doing it this way.

6 burritos

Ingredients:

  • 1/4 cup extra virgin olive oil (divided)
  • 5 cloves of garlic (minced)
  • 1 cup yellow onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 tbsp cumin
  • 1 1/2 tsps chili powder
  • 1 tsp sea salt
  • 10 large eggs (whisked)
  • 1 can black beans (drained & rinsed)
  • 6 lg gluten-free tortillas

Directions:

  1. Preheat the oven to 400F and line your baking sheet with parchment paper.
  2. In a large bowl, combine 2 tbsp olive oil, onion, bell peppers, garlic, cumin, the chili powder and half the sea salt. Toss well then lay the veggies on the baking sheet and bake for 20 minutes.
  3. In the meantime, whisk your eggs in a separate bowl and drain and rinse the black beans.
  4. Heat the remaining olive oil in a large pan over low-medium heat. Pour in the black beans and sautee for about 2 minutes. Feel free to squish the black beans a bit, then  add the whisked eggs and the remaining sea salt. Stir continuously until the eggs are cooked. Set aside.
  5. Once the veggies are complete, add them to the pan with the eggs and mix everything together. Let everything cool for a few minutes.
  6. Divide the egg and veggie mixture evenly between the thawed tortillas and wrap them into burritos. Then wrap each burrito in tin foil and freeze. It helps if you lay out a piece of tinfoil under the tortilla before you roll it so it’s easier to wrap after. Please the burritos in the freezer until ready to eat.
  7. To reheat, put the wrapped burritos in the oven for 30 minutes at 350F when you wake. You can also remove them from the tinfoil and heat in the microwave for 2 minutes instead.
