Hawaiian Style Mango Salsa + Giveaway Winner

I know that for the majority of you guys, it’s cold and snowing/raining and well, just plain miserable out (Toronto included)…but I’m still very much in Hawaii mode, so I’m going to warm up your November with this easy and nutritious salsa recipe.

This salsa recipe is courtesy of my best friend, Jess.  I’m not sure if it was because she lived in Mexico for a year growing up, or because salsa is just her thang, but man does she make a good salsa.  I think the fact that we were surrounded with such amazing fresh produce didn’t exactly hurt either 😉  When it comes to the mango, you can definitely replace it with pineapple (which we did for the second time we made it).

Ingredients:

  • 3 ripe tomatoes, finely diced
  • 1 red bell pepper, finely diced
  • ½ medium sized Spanish onion, finely diced
  • ½ jalapeno with seeds, finely diced
  • ½ mango, finely diced
  • ½ bunch of cilantro, finely diced
  • Juice of 2 fresh limes
  • Salt and pepper to taste

Directions:

  1. Chop all ingredients and mix well!
  2. Serve with organic, gluten free corn chips 🙂
