Fish Tacos

It’s been a while since I posted a new recipe, but this one I’m about to share was a hugely popular one from our 30 Day Wellness Challenge group.

As with most things, I think it was the sauce that really made it!

You can have these on 100% corn tortillas, or in butter lettuce, which makes for amazing lettuce wraps

Ingredients:

Fish

  • 6 - 4oz filets of white fish (this is similar to 1.2lbs fish, or 510g) - I used halibut
  • ¼ cup olive oil
  • 2 tsp chili powder
  • ¾ tsp cumin
  • ¼ tsp cayenne
  • ¼ cup fresh cilantro, finely chopped
  • 1 small head purple cabbage

Tacos

  • 100% corn tortillas or butter lettuce

Toppings -

Choose as many as you like:

Special Sauce (Optional)

  • 1 cup finely chopped cilantro
  • 3 limes, juiced
  • 1 TBSP maple syrup
  • 3 TBSP olive oil
  • 3 TBSP tahini
  • 4 TBSP raw apple cider vinegar
  • 1 clove garlic, minced
  • sprinkling of salt & pepper

Directions:

  1. Cut the pieces of fish into 6, and place in a bowl
  2. In a small bowl, mix the spices (chili powder, cumin & cayenne), cilantro and olive oil
  3. Pour the olive oil and spice mixture on to the fish and marinate for 20 minutes
  4. Heat a frying pan over medium heat and pan fry the fish. It will cook quite quickly (about 4 minutes on one side and 2 on the other). If it’s not cooked enough, just keep cooking it
  5. You can then ‘flake it’ by using a fork and gently breaking it apart
  6. Chop a few cups of the cabbage into small pieces and add it in to the tacos as a topping
  7. Assemble the tacos by adding sauce on to the lettuce or corn tortilla, then fish and topping with cabbage
  8. Top with guac, salsa and/or special sauce!
