Easy Salsa

When I first started posting recipes, a friend asked if I could do a healthy salsa recipe so this one is a special request 🙂 If you read my Top 5 Foods For Men post, you would have seen tomatoes in there, so this salsa recipe is definitely a healthy one!  Tomatoes are a great source of Vitamin A and C and are high in antioxidants!  A lot of the health benefits are in the skin, so this salsa recipe uses the entire tomato, not just the insides.

Quick fun fact on tomatoes – everyone thinks of them as a vegetable, but they are botanically classified as a fruit.  Ya learn something new every day, right?  Enjoy the recipe!

Ingredients:

  • ½ lb of organic tomatoes (approx 4-5 medium sized)
  • ¼ cup of onion, finely diced
  • ¼ cup cilantro, finely chopped
  • ¼ chili pepper, without the seeds (unless you like it EXTRA hot)
  • 1 clove garlic, minced
  • ½ tbsp fresh lime juice
  • salt and pepper to taste

Directions:

  1. If you have a food processor, you can chop everything in it, but make sure not to over chop. If you do not have a food processor, chop everything by hand.
  2. Put all the tomatoes in first, and lightly pulse it until it is a salsa consistency
  3. Remove the tomatoes, and put the onion, cilantro, and chili pepper in and pulse again.
  4. Mince the garlic by hand.
  5. Mix all the ingredients together in a bowl, and add the lime juice, salt and pepper.
  6. Serve with organic corn chips, or Mary's Crackers.
