Creamy Broccoli Salad

Hello HEALers!

I’m writing to you from the lovely Okanagan Valley, BC, where I’m taking a little bit of a holiday, combined with doing some serious HEAL work.  If ya didn’t know, I recently quit my job to pursue HEAL full time!  I’m going to do a full post on that shortly once everything on my site is up and running properly.  For now though, it’s all about da broccoli.

Broccoli is a member of the cruciferous vegetable family, which is one of the best veggie families as it has a ton of health benefits.  Here are the top 3:

1) Anti-Inflammatory

Cruciferous vegetables contain something called isothiocyanates (ITCs) that help to shut down an inflammatory response in the body.  As the typical North American diet is very inflammatory, it’s important to keep these anti-inflammatory foods in our diet.

2) Vitamin C

Broccoli is also an amazing source of Vitamin C – 1 cup has 134% of your daily recommended intake.

3) Detoxifying

Detoxification happens in a 2 step process in our bodies.  A lot of foods will support one step or the other, but broccoli actually supports both.  As we’re exposed to various toxins everyday, our body is constantly detoxifying, so it’s important to provide the liver with all the help it can get! 🙂

Ingredients:

Salad Ingredients:

  • 1 head of broccoli, stem and florets (3 large pieces)
  • ½ red onion, finely diced
  • 2 oranges, peeled and diced
  • ½ cup raisins (preferably, unsulfered)
  • ½ cup almonds, chopped

Dressing Ingredients:

  • 2 medium avocados
  • 1 lemon, juiced
  • ½ cup olive oil
  • ½ cup water
  • 2 cloves garlic
  • 2 tsp honey
  • 2 tsp parsley (I used dried, but could use fresh)
  • salt & pepper to taste
  • cayenne to taste

Directions:

  1. Chop broccoli into small pieces
  2. Finely dice red onion
  3. Peel and dice oranges
  4. Roughly chop oranges
  5. Add above ingredients to a bowl
  6. Add all dressing ingredients into a food processor, except the olive oil and water. While the food processor is running, drizzle in oil and water and mix well.
  7. Cover salad in dressing - note that depending how creamy you want it, you may have leftover dressing.
