This past Sunday, I wasn’t in the mood for spending ages in the kitchen to make anything fancy, so I made a quick gluten free stir fry! The ingredients that I used were super simple, so if you have more veggies around, I would encourage you to use other ones, like carrots, zucchini, bok choy or anything really. If you do add more vegetables, I would recommend doubling the marinade recipe just to make sure it’s extra saucy 🙂
Crimini mushrooms are an excellent source of selenium, an anti-oxidant. Broccoli is an all around wonder-food, if you ask me. Of note, as it is a cruciferous vegetable, it is anti-inflammatory. It is also an excellent source of anti-oxidants, and helps in the natural detox process.
