Guacamole

Hello everyone!

Today’s post is just going to be a quick new recipe that can be a healthy snack or a great appetizer if you’re having company over! This weekend, we had a board games afternoon, featuring Settlers of Catan. For anybody who has played, you will understand when I say that an afternoon quickly became a full evening. Best. Game. Ever.

I made this guacamole recipe for us to snack on during the game and it was devoured by the boys – always a good sign of a winning recipe. I’m not sure where my head was at in the grocery store as I forgot to buy tomatoes or cilantro, but in the end I actually liked this recipe as much, if not more. You could definitely add those two ingredients if you like though!

Serves:

6-8

Ingredients:

  • 4 ripe avocados
  • ½ red onion, finely diced
  • 1 clove garlic, minced
  • ½ tsp cayenne (more or less depending on your spice tolerance)
  • juice of 1 lime
  • salt and pepper

Directions:

  1. Chop the red onion and garlic
  2. Pit the avocados and mix all ingredients together in a bowl
  3. Optional tip: To keep the guacamole from going brown, you can leave a few of the avocado pits in it
