Roasted Veggie Mason Jar Salad

This is a delicious and simple Mason Jar Salad you can easily add to your meal prep.

Of course, you don't have to make it as a mason jar salad - you could just put it in a good ol' Tupperware, but mason jars make everything look prettier, right? ;)

Ingredients:

  • 3 servings of your protein of choice (I used chicken breast)
  • 1 cup hummus
  • 2 cups cherry tomatoes
  • 2 bell peppers, diced
  • 1 red onion, diced
  • 1 cup artichokes
  • 2 TBSP avocado or olive oil
  • sea salt & pepper
  • 3 handfuls spinach

Directions:

  1. Preheat the oven to 400F
  2. Chop the bell peppers and red onion
  3. Place the chopped vegetables, tomatoes and artichokes on a baking sheet and drizzle with oil, salt & pepper
  4. Roast for 30 minutes
  5. Meanwhile, in 3 mason jars, add 1/3 cup hummus to the bottom of each one
  6. When the vegetables are done, add them into the mason jar on top of the hummus
  7. Then add a handful of spinach to each jar.
  8. Finally, top with the protein of your choice.

*Ideally the roasted vegetables are quite oily to add some oil to your salad. If they aren't, feel free to add 1 TBSP olive oil to each jar on top of the roasted veggies.
