Swiss Egg Scramble

This is a relatively quick breakfast that is a nice change to the morning smoothie. You can sub the swiss chard for any other leafy green, and feel free to add extra flavourings. I like this topped with salsa and some cayenne too!

Ingredients:

  • ½ tsp coconut oil or cooking oil
  • 1 clove garlic
  • ¼ cup chopped red onion
  • 2 eggs
  • (Optional: ¼ cup egg white for added protein)
  • 1 leaf of swiss chard (option to remove stems)
  • Salsa (for topping)

Directions:

  1. Heat oil in pan over medium heat
  2. Chop garlic and onion and add to pan
  3. Saute for 2-3 minutes, until onion translucent
  4. Add swiss chard and saute further, until wilted
  5. Add in eggs and scramble all together
  6. Top with salsa (or kimchi)
