Super Quick Homemade Biscuits (Grain Free / Paleo)

Oh boy! Am I excited to share this recipe or what? It’s taken me a few weeks to post it because I’ve been too busy eating batch after batch – hehe!

I recently did a 4 week stint grain free – and in fact am sticking with it for the most part – and my Mom, the wondrous gluten free baker that she is, quickly adapted one of her recipes to be grain free. I was home over Easter, and have made them every weekend since!

There are two versions of this recipe – one is egg free and is not. From an aesthetic perspective, the biscuits with eggs look better, but from a taste perspective, both are great! The biscuits pictured are with egg.

Now, before you go looking at the ingredients and thinking to yourself – there’s too much fat in this recipe, please listen. These biscuits will not cause weight gain. In fact, when you eat these, you feel satiated, and experience less craving and less need to eat until your next meal. This is because when you remove the grains, you’re removing the foods that tend to spike your blood sugar (spiked blood sugar = weight gain, cravings and energy slumps). This isn’t to say eating grain free is for everyone, but I know a lot of my clients feel great doing it.

Ingredients:

  • 1 cup almond meal
  • 1⁄4 cup coconut flour
  • 1⁄2 tsp baking powder
  • 1⁄2 tsp baking soda
  • 2 TBSP melted coconut oil
  • 4 eggs, beaten (or replace with 4 flax eggs, which is 4 TBSP ground flax and ¾ cup warm water, mixed together in advance)
  • 2 tsp honey
  • Sprinkling or pinch of salt

Directions:

  1. Preheat the oven to 350F
  2. Mix all the dry ingredients together
  3. Melt the coconut oil
  4. Whisk the eggs, or make the flax eggs
  5. Combine the coconut oil, egg ad honey together in a 2nd bowl
  6. Combine the wet and dry ingredients
  7. Line a baking sheet with parchment paper
  8. Scoop ⅙ of the batter and drop onto baking sheet (for flax egg biscuits, you will need to form more into a biscuit, but for the regular egg biscuits, they will form themselves)
  9. Bake for 15-20 minutes - depending on your oven. Again, the flax biscuits will still be a bit soft on the inside - that's ok!
